Healthy Comfort Food – Potato and Leek Soup

Easy batch food

Potato and leek soup is simple to make, so, check out my easy recipe with a few added surprises. Also easy for our carers to make our clients in a jiffy. Remember ‘fresh is best’!

This tasty dish is a meal in itself and with a chunk of wholemeal fresh bread you have a hearty, wholesome meal that you can batch make. It also contains 2 favourites to ward off colds (garlic and leeks) plus this will warm you up on a chilly evening. The evenings are cooler and darker so for me soup is a winner and you can make a big pot and have it whenever you want.

Ingredients

  • 3 tablespoons of unsalted butter (your choice)
  • 4 large leeks, white and light green parts only, roughly chopped (about 5 cups)
  • 3 cloves of garlic, peeled and smashed
  • 2 large potatoes, peeled and roughly chopped into ½-inch pieces
  • 7 cups of chicken or vegetable broth
  • 2 bay leaves (optional)
  • 3 sprigs of fresh thyme, rosemary or oregano (your choice)
  • 1 teaspoon of salt
  • ¼ teaspoon of ground black pepper
  • 1 cup of full cream (or a carton from the supermarket is about right)
  • Surprise:  cook an apple to add some sweetness at the end with some cooked bacon lardons.

Lets’s go:

  1. Melt the butter over medium heat in a large casserole pot. Add the leeks and garlic and cook, stirring regularly, until soft and wilted, about 10 minutes. Adjust the heat as necessary so as not to brown.
  2. Add the potatoes, broth, bay leaves, herbs, salt and pepper to the pot and bring to the boil. Cover and turn the heat down to low. Simmer for 15 minutes, or until the potatoes are very soft.
  3. Fish out the herb sprigs and optional bay leaves, then purée the soup with a hand-held blender until smooth.  Add the full cream and bring to a simmer. Taste and adjust the seasoning with salt and pepper. If the soup is too thin, simmer a little more until thickened. If it’s too thick, add water or stock to thin it out. Garnish with fresh herbs if desired.

  5. Note: As this recipe has cream in it I advise not to freeze.
